Sanglier Cellars 2018 Beau Cochon Cabernet Franc

FARMING

Sustainability is our everyday approach to farming. We walk the vineyards, know the vines, we understand our boots on the ground are the most important thing we can do to ensure our farming is in balance with the environment. We count insects, we promote biological diversity, we use organic solutions. We are good stewards.

VINEYARD

This vineyard is in Sierra Foothills. The vines are planted at higher elevations in decomposed granite soils. Warm summer days, cool nights, well drained soils and excellent farming are the hallmarks of this site.

WINEMAKING

Clean, Hand-Crafted wines are what we do.  We have been doing it for years. Excellent vineyards and superb farming lend themselves to non interventionist winemaking.  We use time, temperature, and hand pump overs to achieve the texture, extraction of aromatics and depth of flavors in our wines. No additives can compete with keen observation, hard work, and patience in the cellar. These wines are unfiltered and unfined, these are honest wines.

THE WINE

Perhaps a little flirtatious on the nose. Fragrant spice, rich smells of old leather, beautiful sweet red fruit greet you when you lift the glass. A taste reveals round, supple flavors of rich strawberry  fruit framed by hints of dried herbs and soft tannins. Scott says this wine smells and tastes like Christmas. I can’t argue.
